Start a weekend morning pancake tradition with these yummy whole wheat Chiquita banana pancakes.
1 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 tablespoon honey
2 large eggs
1 cup milk
2 teaspoons oil
2 ripe mashed bananas
maple syrup or agave nectar for serving
Whisk wet ingredients (honey, eggs, milk, oil) together in a bowl. Fold in mashed bananas.
Mix in dry ingredients (whole wheat flour, baking powder, salt, cinnamon) to the wet ingredients, don't over-mix.
Lightly coat a skillet with cooking spray over low-medium heat and drop 1/4 cup of batter onto the skillet. Once the batter starts bubbling, flip the pancake over until both sides are cooked. Makes approximately 12 pancakes.
